Banana ? Soufflé

Ingredients

1 ripe banana

1 large egg

Dash of cinnamon

Plain Greek yogurt (accoutrement)

Fresh fruit of choice (accoutrement)

Directions:

The banana soufflé is such an easy go to meal when you’re camping. Some mornings we have a hike planned, bike trips, or a kayak trip to go on so we want the energy provided by the banana soufflé and speed to get out of camp fast. I hope you enjoy this go to recipe.

  1. Mash ripe banana in small bowl
  2. Crack egg into bowl with mashed banana
  3. Sprinkle with cinnamon
  4. Whisk ingredients
  5. Spray 2 four ounce ramekins, bake in microwave for 3 minutes.
  6. Serve with yogurt and fruit
